Our Lavender Lemonade popcorn is an ode to Seattle summer: A sweet yet tangy lemon caramel, made with real lemon zest, lemon and lavender essences, and balanced with aromatic lavender flowers. It's a little piece of our warm summer days, sitting in the sunshine and sipping lemonade with wafts of lavender coming out of the back garden. 

Today we are going to follow one of our cooks, Tim, through the process of creating our Lavender Lemonade flavor from start to finish. 

We start by air popping our mushroom kernels, and measuring out the popped 'flakes' into a 20 gallon container. Once the Lavender Lemon sugar base is caramelized to perfection in one of our kettles, we add the air popped corn, and allow it to coat each piece. 

Then, we add real lemon zest and whole lavender flowers for bursts of floral and citrus in every bite. 

When the popcorn is thoroughly mixed, it is poured onto a cooling table to harden as it comes down from over 300 degrees to room temperature.

During the cooling process we have to be very careful to keep the popcorn moving, as it will quickly turn into the world's largest popcorn ball.

Once cool, it’s ready for its close-up with your taste buds. We test every batch before binning it up (for quality control, of course), and off it goes to one of our retail stores, or through the mail to a discerning popcorn connoisseur.
